Gluten Free Guilt Free, Chocolate Cake

I found this recipe online and I knew I had to make it!! I tried it on the weekend and everyone who had some loved it. It was very moist, especially since there was no flour in it. ;) The cake was basically made of eggs (5), black beans, coconut oil, baking powder, baking soda, agave syrup and raw cocao powder. The cake it self was not very sweet…. Maybe next time I will use Honey?! So I was naughty and made icing with icing sugar and almond milk…… But you didn’t need a lot on each peace, so overall I think the cake was guilt free?! It was tasty anyways!! Haha :)



Blackened Chicken with Greek Couscous Salad

Hey, happy Friday peeps!! :) It’s sunny out and it’s gonna be a good one, I run my first 5km race on Sunday….. Exciting stuff. Last weekend I watched a lot of Jamie Oliver’s 15 min meal episodes on the food network ….. :p I must say I was rather inspired to cook some of these delicious recipes after. I attempted this chicken and salad with yogurt tzatziki the other night, and it turned out rather well! ;)


Pea Shoot & Walnut Pesto

Happy hump day! I have wanted to make this recipe for a couple of weeks, but I wanted to make it when I had a dinner guest. Last night my friend came over for dinner so it was the perfect opportunity. Very easy to make, I used my ninja blender to mix the ingredients. Pea shoots (found at H-Mart), garlic, Parmesan cheese, olive oil and walnuts. It was very tasty with fresh bread and red wine ;)



Happy Cinco de Mayo

I know, I know…. I’m a bit late but I love Mexican food!! The other night I made some bean and cheese quesadillas, I haven’t made anything with refried beans in over a year. :o They never disappoint, I used corn tortillas, topped with salsa and avocado. I had a cucumber and feta salad on the side. Yumm :)


White bean, kale and brown rice stew

Hey, it’s hump day!! ;) I made this stew on Monday night at its going to last all week. Very easy to make and very healthy. Throw all ingredients in the the crock pot and leave it for a few hours and you have dinner. It’s canned tomatoes, garlic, onion, vegetable broth, soaked navy beans and brown rice. You put the kale at then end. Yumm
